A slow Sunday was made for chili. Here is Real Texas Chili: a big ol' chuck roast cut into cubes. Salt and Pepper and brown in batches in a dutch oven in bacon fat. Chop up a big onion and a few cloves of garlic. Saute in the bacon fat. Stir in 2-4 tablespoons chili powder and 1 tsp cumin. 1-2 tsp fresh oregano. Put meat back in and stir to coat in spices. Salt and pepper again. Barely cover meat with liquid of choice: beef broth, water, or canned tomatoes or a combo. Bring to boil and reduce heat cover and cook for 3-4 hours. Serve with beans on the side and fritos and fixins (green onions, sour cream, cheddar cheese, sliced jalapenos, cilantro, salsa, etc.) |
