The saddest part of gardening

There are several things that are really sad about gardening.

It is sad when your plants die.

It is sad when half of your plant freezes in an unseasonably cold night. My tomatoes were so big already! :(

It is sad when bugs/bunnies eat your veggies.

It is sad when they don't produce any fruit.

It is also really sad when you have to thin out your seedlings. It always breaks your heart when those little seedlings have tried so hard to sprout and grow and you have to tear out the ones that are the puniest. Those poor little things tried so hard, and their only crime was growing too close to stronger sprouts.

In my previous gardening forays I always tossed those seedlings. Then "microgreens" became a thing in Martha Stewart. And do you know what? Radish and carrot microgreens are delicious. And make salads so much better. So, even though it makes me sad to rip up those sprouts, at least we are eating them and not tossing them.

We had a radish and carrot microgreen salad. I zested some lemon rind and drizzled some oil and salt and pepper. We also had wild rice, baked parmesan asparagus, and dill chicken with a creamy mustard sauce.

Creamy Mustard Sauce Recipe

  • 2 tablespoons mayonnaise
  • 1 tablespoon olive oil
  • 1 tablespoon white-wine vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper

Whisk together. Serve over chicken or veggies, or anything you want. Delicious. Also, we didn't have dijon mustard, we used our Jack Daniels mustard which has become our new favorite mustard.
